I'm riding the Katy out and back from StL the last week in Apr and I'm considering billeting options. The B&B's look nice, but I really don't need pampering. Simple bunks with an optional meal or eating close by works. Any ideas?

I was considering the same thing, but came to realize that I am very poor at planning my trips and don't like to be on a schedule on such adventures. My experience on the Katy is that there are lots of B&B's, houses, hotels, etc., but very few of the hostel type accomodations you are looking for. Couple that with my desire for the lack of a schedule, potential weather delays, etc., and I came to realize that a 1 man tent or a hammock with a rainfly and bug protection for sleeping is a better option for me. Shower at a truck stop, or just clean up in a bathroom somewhere. Food/water/drinks is not a problem anywhere on the Katy (unless your picky)so you don't need much more than some trail mix and supplemental food until you get to the next stop--that is unless you want to do the whole bikepacking camp food thing.

The Trip Planner above is a good resource to find places to camp or local hotels, b&b's, etc.

It depends on how far "out and back" in week can take you? From StL you have some good stops for a day, but a stretch before jeff city is barren. then to rocheport an booneville are good. sedalia and then it gets a little barren again. But if you go out an back in a week, you probably won't have that much time to sleep if it is 450 miles roundtrip in a week?

caboose in Hartsburg, Rocheport, near Calhoun
rooms in Sedalia
smaller motels in the larger towns
cheaper B&B’s in Peers Store and other places; check their rates on this website
several campgrounds and town parks along the trail
