Looking for recommended ride in vicinity of Columbia

My wife & I will be on a road trip heading West to Denver after Labor Day. We're hoping to ride a section of the Katy Trail after a stopover in Columbia, MO. I was thinking of McBain to Boonville, but now see that part of the trail is closed. Open to suggestions for a nice out-and-back roundtrip ride up to 45 miles. Local restaurants and coffee shops usual get included in our rides! We could start farther east and go to Rocheport, or drive West and start after Boonville ... What does the crowd suggest?

Maybe drive to Rocheport and ride to Cooper’s Landing and back - about a 30 mile round trip. Have a beer or two at Cooper’s watching the river and end the day with supper at Abigails (you’ll need reservations but it’s worth it).

I tried to make a reservation at Abigail's in Rocheport and was informed they are no longer in business.

Does anyone have any input about riding the MKT Trial from Columbia to the Katy and then to Rocheport RT?

I did that ride back in May while in COMO for Summer Fire School. I parked at the Forum Blvd trailhead and rode the MKT down to the Katy then to Rocheport and back. It was 31 miles round trip with 550 feet of elevation gain which included exploring Rocheport and just beyond to the cool tunnel. That ride was why I brought my bike to the week long class. The MKT goes all the way to the downtown and Mizzou campus area which are both worth exploring as well. Shout out to the very tasty Pappo's Pizza in COMO....excellent meal and 30+ beers on tap. Typical big college town....plenty of restaurants and bars downtown. I am doing a RAGBRAI sort of ride except mine is all the way across Missouri, from State Line to State Line. I'm leaving KC on Monday Sep 6th and plan to arrive in COMO on Wednesday...maybe I will see you guys.
