I was considering the same thing, but came to realize that I am very poor at planning my trips and don't like to be on a schedule on such adventures. My experience on the Katy is that there are lots of B&B's, houses, hotels, etc., but very few of the hostel type accomodations you are looking for. Couple that with my desire for the lack of a schedule, potential weather delays, etc., and I came to realize that a 1 man tent or a hammock with a rainfly and bug protection for sleeping is a better option for me. Shower at a truck stop, or just clean up in a bathroom somewhere. Food/water/drinks is not a problem anywhere on the Katy (unless your picky)so you don't need much more than some trail mix and supplemental food until you get to the next stop--that is unless you want to do the whole bikepacking camp food thing.
