Planning on an overnight in Hermann on a weekend in Oct. but everyone, it seems, has a required minimum of a two-night stay for Oct. weekends. Any ideas?

Hermann's Oktoberfest is a huge event, thousands of people flood the town, so B&B's can call the shots. There are B&B's in McKittrick and Rhineland - I don't know if they have the same restrictions, but you might give them a try.

The Rendleman Home 12 miles west of Hermann on the trail does not have a minimum stay

We stayed at the Hermann Motel this past weekend which was Maifest and thy did not have a minimum stay. It didn't come up on the map but I'd you search google you can find it.
I would give it 2/5 stars. No dead animals in our room at least.
