Which of the bike shops on the trail has the best (lightest) bikes?

What I recall seeing in the Rocheport and Defiance bike shops are hybrids, none of which I'd call best because of weight. Consider bringing your road bike if you want a light weight ride.

Hey Trek, ouch! I ride a Trek Verve 1 Hybrid and it's no pig! It's a relatively light bike. I don't know that any of the bike rental places are renting "high end" bikes (Trek, Special(iz)ed, Cannondale, etc)
